Ingredients of Chocolate Jamming Goat

  • For the mousse:
  • 30 gm Belgian chocolate
  • 20 gm Fresh cream
  • 10 gm Whipping cream
  • 1 gm Gelatin
  • For the lemon curd:
  • 4 Lemons (zest and juice)
  • 1 cup Granulated sugar
  • 4 Eggs
  • 1/2 cup Unsalted butter

Take some warm water in a bowl and add the gelatin to it. Allow it to bloom. Place a pot of hot water. Keep a bowl on top of it.

Add the chocolate and fresh cream to a bowl. Whisk the mixture and let it melt in this double boiler.

Ensure that the chocolate does not burn. Add the gelatine and let this mixture rest.

Add whipped cream to the mixture and set it in a mould for three hours. While the mixture is setting, it is time to make the lemon curd.

Wash the lemons and zest them, post which juice the lemons. Ensure that there are no seeds. In a saucepan, whisk together lemon juice, lemon zest, granulated sugar and eggs.

Let the saucepan be on medium heat and add the cubes of butter. Whisk constantly until it reaches a custard-like consistency.
7.
Set this mixture aside to cool down. De-mould the mousse and set it on a plate. Garnish with lemon curd and some berries and serve.
