Mayak Gyeran (Korean Marinated Eggs) Recipe: Mayak Gyeran is a delicious way to enjoy eggs with rice. Apart from boiling the eggs, no cooking is required for this Korean-style dish. The eggs are soaked overnight in a runny and flavourful marinade containing soy sauce, sesame seeds, garlic, chillies and more.

Ingredients of Mayak Gyeran (Korean Marinated Eggs)

  • 4 eggs
  • 1 tsp vinegar (optional)
  • 1 tsp salt
  • For the marinade:
  • 1/2 cup soy sauce
  • 1 cup water
  • 2 tbsp honey
  • 2 tsp roasted white sesame seeds
  • 2 green chillies, roughly chopped
  • 1/2 cup red pepper (capsicum), finely chopped
  • 1 cup spring onion greens,, chopped
  • 3 garlic cloves, finely chopped
  • Salt to taste

In a pot, boil eggs in water with salt and vinegar. Boil for 10 minutes, remove the eggs and place them in cold/ iced water for around 5 minutes. Once cooled, peel off their shells and set aside.

In a large bowl, add water, soy sauce, honey and sesame seeds. Stir well to combine.

Then add in the rest of the ingredients for the marinade, as listed above. Taste to adjust salt.

Now, put the boiled eggs into this bowl, cover and let it sit overnight (or 8-10 hours). Store in a cool place, or better yet, refrigerate the bowl.

Later, you can enjoy it with plain steamed rice. Cut the eggs in half before serving.
