How to make Zucchini Boat

Zucchini boat is filled with colourful winter vegetables and baked in such a way that it always catches the eye of the person eating it. It needs no accompaniments such as rice or bread since the zucchini boat adds to the bite. Great way to feed a bunch of vegetables to kids!

Ingredients of Zucchini Boat

  • For the bechamel sauce:
  • 20 g Butter
  • 20 g All purpose flour
  • 200 ml Milk
  • 2 g Fresh oregano
  • 2 g Fresh basil
  • For the tomato sauce:
  • 10 ml Olive oil
  • 100 g Tomato puree
  • 2 g Garlic
  • 10 g Onion
  • 2 g Fresh oregano
  • 2 g Fresh basil
  • For the filling:
  • 20 g Butter
  • 20 g Babycorn
  • 45 g Bellpepper
  • 20 g Carrot
  • 10 g Sweet corn
  • 40 g Zucchini
  • Others:
  • 1 piece Zucchini
  • 40 g Cheese

How to Make Zucchini Boat

For the bechamel sauce:

1.
In a saucepan, melt the butter and whisk in flour till smooth. Cook the mixture until it achieves a light golden colour.

Increase the heat, slowly whisking in the milk to ensure no lumps are formed. Bring bechamel to a simmer for 10 minutes, add salt, pepper and fresh herbs.

For the filling:

1.
Finley chop all the vegetables into small cubes. In a saucepan, put butter and saute all the chopped vegetables to form a brunoise.

In another saucepan, add oil with garlic and onion, cook till translucent. Add the tomato puree to this, season with salt, pepper and fresh herbs. To this now add the brunoise, and cook till vegetables are softened.

For assembling:

1.
Cut the zucchini into half from the middle (length-wise) to get two long halves. Hollow it by removing the marrow (white part) keeping a body of roughly uniform thickness all around (this will become our boat.)
2.
Layer the inside of hollowed zucchini with a thin sheet of bechamel sauce. Fill the inside of the hollowed zucchini with vegetables filling prepared in tomato sauce.
3.
Top it cheese and cherry tomatoes, and bake it in oven at 180 degree C for 6-8 mins. Serve it hot!
